I’m a traditionalist and prefer the stove top and stir risotto method. This came close in texture and was easier. There are just two older adults in our household so I used 3/4 cup arborio rice, 1-1/2 cups no chicken broth, 1/2 of a small onion minced, 1 garlic clove minced, 1/4 cup dry white wine, and1Tablespoon olive oil. Finished with 1/2 cup frozen petite peas and about a quarter cup of fresh grated parmesan cheese.4 stars

Ghee is flavorsome, healthy, and offers a creamy mouthfeel when used in cooking risotto. It enhances the creamy feel of the dish which I miss with butter or olive oil as cooking oil. This is the first time I’ve tried risotto per your recipe. Seems like a lot of liquid. But I’m used to using one and a half cups of abrorio rice generally.
I didn’t have any white wine, so I used dry vermouth, which is a great substitute if you don’t keep white wine on hand. You can always use the vermouth in cooking! it adds the dryness, the acidity and a few other herbal flavors that are not noticeable once it’s cooked.
I also rarely see garlic included in most risotto recipes. So I left it out and just added a pinch of garlic powder. Also soy sauce sounds like a great idea but instead of soy sauce. I used some Vietnamese fish sauce but only a tablespoon. I’ve learned in many Italian recipes Anchovies add that umami flavor. And what’s fish sauce except fermented anchovies? At the end I also added some dried parsley and some dried chives since that too I didn’t have anything fresh. A lot of people look down on dried herbs but if they’re fresh and that’s all you have, why not? I received the mini instant pot as a gift from a neighbor who was moving away and never used it. Although it’s as convenient as the 6 quart IPA, I feel that it takes a little bit longer sometimes for things to come up to pressure in the mini IP.
