It sounds counterintuitive but large pieces of meat actually take *less* time because they take longer to come up to pressure. This coming up to pressure time, before the actual “cook time” countdown starts, is still cooking the meat so the recipe time needs to be reduced (I’ll leave it up to Amy & Jackie to say which time is better to reduce – the under pressure cook time or the natural release time). Same counterintuitive concept for smaller roasts – they take *longer* because the coming up to pressure time is shorter. 😉

Yay! Came out so moist and tender. This is the second time I’ve tried this recipe and this came out better. I took it out to cover and rest when it was almost 143… didn’t overcook it. The gravy was yummy. Thank you so much!

My pork loin was thick so I pressure cooked it for 8 minutes/45 minutes NPR and it was exactly 145 degrees. I made no changes to the recipe except for using 1 cup of water and Chicken Better Than Bouillon. I wanted thicker gravy so I added 3 T of flour and about 4 T of water. The gravy is super tasty! I served it with pasta. I have an Instant Pot Pro Plus.5 stars

At 8 minutes pressure and 45 minutes on warm, the roast was pinker than we really wanted, so I’ll try 10-12 minutes next time. Had no onion so substituted mushrooms, had no rosemary so substituted thyme; I’m sure it tasted differently than the original recipe, but we liked it a lot. This is definitely a keeper!5 stars
