Delicious! So much so that just cooking 1 cup of rice is not enough, plus sometimes I just want to use up a whole can of coconut milk at once. So I triple the recipe:
3 cups Jasmine Rice
1 (13.5oz/398ml) can coconut milk
550 ml water
2 tsp organic chicken better than bouillon (already salted so no need to add salt or just use unsalted chicken broth if that’s what you have and add salt 3/4-1 1/2 tsp salt).

This rice was excellent: so fragrant, and with that wonderful coconut taste. I soaked and rinsed my rice thoroughly before starting, but still, it was a bit too chewy for our tastes. I took the suggested advice and added a bit more stock, and I also added some ghee, and this made a nice, soft, fragrant rice. We enjoyed it with a Jamaican Brown Stew Chicken. Delightful! I will be putting this rice into regular rotation in our household, as my whole family loves the notes of coconut to elevate a regular rice dish.
Nicely done! Highly recommended.

Wasn’t feeling well and picked up a quick meal of prepackaged Asian braised beef tips. Wanted to add a little something to go with it. Found this recipe for ip coconut rice. Wow! Not only was this simple and easy to put together with a headache and vertigo but, this was super tasty too. Thank you so much. I will definitely be making this more. I doubled the recipe and used 1/2 tsp of salt total. Perfect accompanying side or alone.

So easy and delicious! A hit with the kids as well. I topped it with Island Chicken (cinnamon, chili, cumin rub and sauce- soy sauce, sriracha, and brown sugar). Keeping this one!

This is my go-to website for instant pot rice recipes, and this coconut rice does not disappoint! It’s warm comfort food in the winter, and nice in the summer with tilapia and mango salsa. 🙂

Coconut cream will work. If it is too thick, you will have to use more chicken stock and less coconut cream.

Made this tonight for supper. So super easy and soooooooo delicious. Husband usually doesn’t eat rice but he had a big serving of it with the sauce from the Huli Huli chicken (also made in the IP)
and had coconut cream pudding for dessert. Made for a nice light supper on a hot summer’s night.
