That is another flavour bomb! You did it again as always! The mushrooms still have a chew to them and I don’t like a thick soup was perfect. I used half and half. Thanks for another winning recipe!5 stars

I did use beef broth instead of the chicken and it is the most flavourful mushroom soup I have ever had. Thank-you Amy and Jacky for this delicious recipe.5 stars

I didn’t use shiitake mushrooms, but used regular white mushrooms as well as a packaged variety of gourmet mushrooms I found at Kroger.
One question – Has anyone tried freezing the soup, does it separate due to the cream?5 stars

However, the soup did not taste fishy at all!⁣

The only modification I made was substituting coconut milk for the heavy cream; the soup still had a nice creamy texture.⁣ Drizzle a little Truffle Oil onto the top of the mushroom soup before serving. Into mushroom soup? I highly recommend this recipe; it is simple, delicious, and quick in the Instant Pot.⁣5 stars

It is soo good! I only had white mushrooms, all purpose soya sauce no fish sauce so thank you for the tip in adding an extra cup of chicken broth! It worked! I’ll never eat canned mushroom soup again! Ever! Thanks for that lol!!! But for real. A must try!5 stars

Two ideas:
1. Arrowroot powder (use like corn starch). Just gently sprinkle on food at end of cooking process and stir slowly and carefully to avoid getting a poof of powder up your nose! Blends lump free. Heat triggers the thickening process.

2. Use a blender to puree a portion of the soup, then pour back into the soup. If not thick enough, repeat. Works for soups, stews, goulash, etc, where you desire a thicker texture / gravy.
