Made this yesterday using 1:2 egg to water/broth ratio. Very smooth and definitely reminds me of childhood. But I think I prefer 1:1 ratio with more egg taste. I did put some dried shrimp in it but they all sunk to the bottom.5 stars

Served with green onion and fried garlic. The egg is so smooth, so add some crunchy element to it. Just my personal preference.

Once it’s ’old’ 蒸老蛋 the whole dish is ruined. Now I use instant pot, it turns out perfect every time. It’s so silky smooth, I have to be careful not to break it when pouring soy sauce over it. It even jiggles like jelly.5 stars
