For those who are looking for a gluten-free alternative to panko breadcrumbs, I would suggest starting with 2 tbsp and adding more if you think the mix needs it.

Simple idea to cook a small portion to check the seasoning was great! I ended up adding 1/2 teaspoon of soy sauce and a Tbsp of tomato paste. I used 400 ml passata (gezeefde tomaten) in the sauce instead of the mentioned tomato sauce. I also added ½ tsp salt, freshly ground pepper and 1 tsp sugar to make up for the substitution.

For the meatballs I used 3/4 tsp ground fennel seed, 30 grams of dried “Parmesan”, 30 grams of fresh mozzarella, a medium egg and everything else as stated in the recipe. Next time I will reduce the fennel to ½ tsp and grate the onion – both a personal preference of mine. I got 11 meatballs plus a tiny tester patty from the meat mix. In my oven, set to 230 degrees Celsius, it took just over 10 minutes to brown the meatballs.

The meatballs are so good and the sauce was great. The whole recipe is very easy and fast to make. I will be making this again for sure 🙂5 stars
