This recipe is going to be on repeat a lot 🤤 I made today like over 4lb so I can freeze it!5 stars

Everyone loved it! Agree the consommé was thicker than we are used to but it did not disappoint. I made queso birria tacos. Kids ate them up! I didn’t have coriander and I used ground cinnamon with a 2.5lb Chuck roast.5 stars

The last time, however, I served the birria as an enchilada casserole instead of in tacos. The flavors blended even better, and it was so much easier to serve! A keeper. 🙂

I highly recommend this and it will be made again and again. Used chuck roast but will mix with short ribs next time. ⭐⭐⭐⭐⭐5 stars

Hi Quyen,

Thank you for your kind words and question 🙂

As long as the short ribs are 1.5″ – 2″ thick, the cooking time will work for both bone-in or boneless.

Take care & have fun cooking
Jacky

We’ve made this with chuck (delicious) and beef cheeks (a bit too fatty of a cut for my taste, but still delicious flavoring!) We are planning to make it again with bone-in short ribs. Do the short rib timings in the recipe refer to bone-in or boneless? Thanks!5 stars

It is smoky, earthy, and delicious !!! I used chuck eye steak and it was amazingly tender and flavorful ..and for bonus points, it tastes great on a doritos Loco hard taco shell as well.5 stars
