I’ve been missing egg custard …my local Dim Sum restaurant has other pastries, but no egg custard tarts. Also reminds me of South African Melktert and Portuguese egg custard tarts. I can see with minor changes the profiles can be altered to these other cultures. I did use 5Tbls of sugar (seemed perfect) and 1tsp vanilla. Beautiful consistency! I’m one happy camper! BTW, I prepared the custards in 4- wide mouth 8oz mason jars5 stars

My parents love it. It turned out very smooth as long as you follow directions to strain the egg mixture. If you don’t strain, the flavor is the same but the texture is not as smooth but still tasty. Glass jars are Yoplait Oui yogurt jars.5 stars

the 4 (8 oz) mini cocottes fit great! The bottom 2 used foil to be flat, top 2 covered with the lids👍
