I mostly follow the recipe to a “t” and it is overall my family’s favorite and most requested “birthday dinner”.
BUT I am cheap and use Costco’s Chuck Short Ribs without the bones. I chunk them in large pieces to spoon out over homemade risotto.
Also…I always use homemade beef broth and a fig balsamic vinegar. We like it a bit sweeter.5 stars

I don’t use the fish sauce. Turns out delicious everytime. I sub in stew meat and mushrooms sometimes. Incredible gravy/sauce. Potatoes in the stainless bowl..easy peasy

This is honestly the BEST dish I’ve ever made in 40+ years of cooking. Definitely Thanksgiving and Christmas worthy. I was out of fresh carrots so I used canned, used beef base instead of broth, Joel Gott Cab Sav, and cooked my potatoes separately since there wasn’t room in the cooker for them. Once the cooking was done and pressure was released, I removed the ribs and used my immersion blender to purée the veggies. No thickening agent was needed and the result was to die for. This will be a repeat recipe. Thanks Amy & Jack for sharing.5 stars
